CPJ Saint Lucia Ltd., a leading distributor of wines, spirits, food, beverage, and fast-moving consumer goods, is seeking a suitably qualified and experienced individual to join our Warehouse & Logistics team in the position of Butcher.

The successful candidate will be responsible for the safe, hygienic, and efficient preparation, cutting, trimming, portioning, packaging, and handling of meat and poultry products within the Temperature Control area of the Warehouse. The role ensures that all meat products are prepared according to company standards, customer orders, product specifications, food safety requirements, and quality control expectations.

The Butcher is also responsible for maintaining proper cold chain practices, minimizing waste, supporting accurate stock handling, and ensuring that the work area, tools, and equipment are kept clean, sanitized, and compliant with health, safety, food safety, and company SOP requirements.

The Butcher reports directly to the Temperature Control Supervisor, with functional oversight by the Warehouse Manager where required.

Key Responsibilities

The successful candidate will be required to:

  • Cut, trim, debone, portion, mince, slice, and prepare meat and poultry products according to established specifications.
  • Prepare meat products for wholesale, retail, internal departments, and customer orders as required.
  • Prepare meat and poultry products strictly in accordance with approved customer orders, invoices, picking slips, product specifications, production instructions, or supervisor directives.
  • Ensure correct portion sizes, product presentation, weight, labelling, and packaging standards are maintained.
  • Follow cutting instructions and product specifications issued by the Temperature Control Supervisor, Warehouse Manager, or other authorized member of Management.
  • Assist with special meat preparation requests, including custom cuts, bulk orders, and repacking where required.
  • Maximize product yield by using proper cutting techniques and minimizing excessive trimming, incorrect cuts, wastage, spoilage, product damage, and rework.
  • Identify and separate products that are damaged, expired, thawed, contaminated, spoiled, or otherwise not fit for processing or sale.
  • Maintain strict compliance with food safety, sanitation, hygiene, occupational safety, public health, and company SOP requirements at all times.
  • Ensure that meat and poultry products are handled in accordance with proper cold chain and temperature control requirements.
  • Wear all required Personal Protective Equipment, including but not limited to gloves, aprons, safety boots, hairnets, and cut-resistant gloves where applicable.
  • Prevent cross-contamination by following correct handling, storage, cleaning, and separation procedures.
  • Check product quality, freshness, temperature, packaging condition, and expiry information before processing.
  • Immediately report any product that is thawed unexpectedly, outside the required temperature range, leaking, damaged, contaminated, expired, spoiled, or otherwise unsuitable for processing, storage, dispatch, sale, or consumption.
  • Immediately report any food safety, product quality, contamination, pest, equipment, or temperature concerns to the Temperature Control Supervisor.
  • Assist with receiving, sorting, rotating, storing, and issuing meat and poultry products within the Temperature Control area.
  • Follow the First Expired, First Out and First In, First Out principles where applicable.
  • Support accurate stock movement by ensuring that products are properly counted, weighed, labelled, and recorded.
  • Assist with stock counts, cycle counts, inventory checks, and product reconciliation when required.
  • Minimize waste, shrinkage, incorrect cuts, over-trimming, and product damage.
  • Ensure that processed products are returned promptly to the appropriate chilled or frozen storage area.
  • Safely operate butchery tools and equipment, including knives, saws, slicers, grinders, scales, wrapping machines, and other approved equipment.
  • Ensure knives, blades, saws, slicers, grinders, scales, wrapping equipment, and other butchery tools are safely used, cleaned, sanitized, stored, and accounted for.
  • Clean, sanitize, and store all tools and equipment after use and in accordance with company procedures.
  • Inspect tools and equipment before use and immediately report defects, damage, missing tools, missing blades, or unsafe conditions.
  • Use knives and cutting equipment responsibly to prevent injury to self and others.
  • Maintain the butchery work area in a clean, orderly, and safe condition throughout the shift.
  • Work closely with the Temperature Control Supervisor and Warehouse team to ensure timely preparation and dispatch of products.
  • Support loading, picking, staging, and movement of temperature-controlled products where required.
  • Assist with ensuring that orders are completed accurately and within required timelines.
  • Comply with warehouse movement, safety, housekeeping, and restricted area procedures.
  • Support operational efficiency by communicating product shortages, delays, stock concerns, or processing issues promptly.
  • Follow all company policies, SOPs, health and safety rules, food safety requirements, public health requirements, and warehouse procedures.
  • Complete or support completion of required records, including production records, waste records, temperature logs, cleaning records, sanitation records, and stock movement documents where applicable.
  • Report workplace accidents, near misses, unsafe conditions, equipment faults, and product incidents immediately.
  • Cooperate fully with internal audits, inspections, stock investigations, and food safety reviews.
  • Maintain confidentiality regarding company operations, product pricing, customer information, and internal processes.

Minimum Requirements

Applicants should possess:

  • Previous experience as a Butcher, Meat Cutter, or in a similar meat processing role is preferred.
  • Experience in a warehouse, supermarket, food distribution, cold room, or food handling environment would be an asset.
  • Basic knowledge of meat cuts, trimming, deboning, portioning, and safe knife handling.
  • Knowledge of food safety, sanitation, hygiene, and cold chain requirements.
  • Ability to read labels, follow instructions, weigh products, and complete basic records.
  • Valid food handler’s permit or willingness to obtain same, where required.
  • Forklift or pallet jack experience would be an asset but is not mandatory.
